Cokkis

   Cokkis

What is required:

450 grams of rice flour

1 egg, 1 teaspoon of sugar, 2 cups of condensed coconut milk, a pinch of turmeric powder, a pinch of salt

Method of making:

Take a bowl and mix flour, eggs, sugar, turmeric, salt and coconut milk in it. The mixture should not be sticky after kneading. Keep the mixture for 1/2 hour. Then take a pan and heat enough oil to cover the kokis mold. Then put the cookie mold in the hot oil, let it heat up a little and then press the mold into the flour mixture. Take the flour mixture to 3/4 of the mold.

Then place the mold in the hot oil. When placing the mold, hold the mold steady on the base of the pan. When the kokisi is fried, remove the kokisi with a fork and keep it in the pan for a while and remove it from the stove. Then keep the coconut in hand and let the oil escape.
